Several months ago I tried the making the cake using a box of angel food cake mix and a can of pineapple tidbits. The simple recipe had been going around facebook and it looked and sounded delicious.
Although the result was tasty, it failed somewhat because I didn’t have a large enough pan. The cake overflowed, made a mess in the oven and wasn’t completely cooked. It still tasted good and was like one of those cakes that have a molten mass in the middle. I don’t think there is a way to make this cake that doesn’t taste good – even the uncooked batter is very yummy. 🙂
This time I decided to try it 2 different ways. The first was in a mug in the microwave. I misjudged the amount it would rise again and ended up with a mess in the microwave and a cake that again was not completely cooked – but still tasty. I then divided the rest into the casserole dish I had used before and another smaller casserole. Because some had already been taken out for the mug cake, this was just right. Both the large and small cakes rose nicely, turned brown and taste amazing!

1 box angel food cake mix (I suggest the white and not other flavours) and 1 can pineapple tidbits.
Mix together and pour into a 9 x 13 pan. Bake at 350 degrees for 30-35 minutes.
This cake rises quite a bit as you would suspect from the angel food cake. My mug was less than 1/2 full and it overflowed, so both the casserole dishes I used today were about 1/4 – 1/3 full and they nicely rose to almost the top and did not spill over.
The small one is about 4×4 and was finished about 5 minutes before the larger one which is 8 x 8. I almost considered doing one in the crockpot too – but opted for just oven baked. I may try the mug one again and only 1/4 fill the mug next time too.
