I have probably mentioned before that I am not a cook or a baker and I never actually follow recipes when I do attempt to make something.
My friend Chardon, whom I have known online for many years, casually mentioned peanut butter cookies this morning on FaceBook and I started thinking I should make some.
I checked out several recipes online and decided to try a Three Ingredient Peanut Butter Cookie recipe that I found at All Recipes. It is a very simple recipe.
1 cup peanut butter – 1 cup white sugar – 1 egg. Preheat over to 350. Mix all ingredients together until smooth. Drop spoonfuls of dough onto the prepared baking sheet. Bake at 350 degrees F (175 degrees C) for 6 to 8 minutes. Do not overbake! These cookies are best when they are still soft and just barely brown on the bottoms.
I happened to have a jar of hazelnut/chocolate (Great Value from Walmart) and thought I could put a bit of that in the centre of each cookie and surround that with chocolate chips – so I did.
The batter was pretty soft and I pushed them all down a bit as I put them on the sheet. I should have made an indentation in the middle to put the hazelnut/chocolate, but just plunked it on top.
I got 9 cookies out of this recipe, so I might have made them bigger than they should have been and they maybe should have stayed in the oven a bit longer. I took them out after 8 minutes though.
It took about a 1/2 hour for these to harden into cookies that could be picked up – but they were quite tasty. Very peanuty flavour (as you would guess).
Next time I will leave the hazelnut/chocolate out because that did not harden, which made it difficult to store the extra cookies for another time. The chocolate chips are dark chocolate and I am happy with those and will use them again (maybe mixed in instead of put on top though. I will also make them smaller, so the 8 minutes should bake them a little more.
