Crockpot Garlic Sausage & Veggies

Every once in awhile I make something to eat that I like, so I share it with you.  As usual, I changed this a fair amount from the original one I found that was called Grilled Sausage & Vegetables in Foil Packet.  You can find the original recipe here, but searching the same name, I found several different variations, so I am not the only one who likes to change things.

Here is what I used.

1 tablespoon Olive Oil
2 medium potatoes (cut in chunks)
1 bell pepper (I used orange) cut in strips
1/2 medium onion (chopped)
large white mushrooms (about 12)(cut in 1/2)
1 Garlic Sausage link (or smoked sausage or Kielbasa) (cut into 1/2 or 1 inch chunks)
4 large carrots (cut into chunks)
seasonings of your choice – I used Garlic plus and a bit of salt

As you cut up the ingredients (except for the sausage), add them to a large bowl.  Add the Olive Oil and seasonings and toss or stir everything.  Then add the sausage, mix and put all into crock pot.  Put on high and walk away.  It was ready in about 4 hours.

This is a recipe that you can use whatever you like.  The original recipe was designed to be cooked in foil on a grill, but I don’t have a grill and the crockpot was fine for it. I did not add any liquid.
